Vegan chocolate mug cake recipe

Sometimes you just want something sweet but you don't want to wait forever or make an entire pan of something. That's why mug desserts have quickly become my favorite thing in the world. You can make a single serving of cake (or just about anything) and it takes little to no time! It's even better if it's this recipe. The most common time I want this cake is during a certain time of the month. Too much info?

This really is the most simple but delicious cake in the world. You don't need any fancy ingredients and it takes about two minutes from start to finish. It's the right texture and taste. It tastes amazing with ice cream on top or you can top it with powdered sugar. This is a vegan cake but you can easily make it with regular milk...if you're into that sort of thing.

Vegan Chocolate Mug Cake
4 T. Flour
3 T. Sugar (I used this brand)
1 T. Cocoa Powder
1/2 tsp. Baking Powder
4 T. Vegan Milk or Water
1 T. Coconut or Vegetable Oil
1 tsp. Vanilla Extract
1/4 tsp. Cinnamon (optional)

Mix all ingredients with a small whisk or fork. Once combined and no flour remains in the mug cook in your microwave for 1 minute and 30 seconds. I always watch it because as soon as I start to smell it I know it is almost done. You can let it cook the entire time for a cake like consistency or take it out a little early for a fudgy brownie consistency. Your choice!

I like to top mine with ice cream while it is still hot so the ice cream melts into the cake. I also like to sprinkle cinnamon on top of the ice cream or mix it into the batter. It's pretty much the best thing ever. Like I said before you can also top it with powdered sugar or even coconut whip topping (that recipe is coming soon!) but do whatever your heart desires.

I know this may be TMI but I am all about being open and honest about my period. I am not a chocolate fan. I don't eat it except for when it's "that time of the month". It's because of this that I wanted to find an easy recipe that I could whip up when the craving hits. This recipe is so easy you can teach your kids to make it! But remind them to do it when you are home to help. My sister once tried to make a mug cake when no one was home and almost burned the house down! Not fun to come home to burned chocolate and smoke.
